One of the most important components of the knight's protective equipment, which unmistakably indicates the period, is surely a gorget. It's time to replace the obsolete chain mail coif with an all-metal neck protection if you are claiming to match the style of the 14th or subsequent centuries.
Based on medieval images, the “Black Knight” gorget is suitable for any fantasy or historical Western European set of 14-16th cc. Handmade according to the customer's measurements of stainless steel 1.5 mm thick. Features stiffening ribs in front portion to exclude any penetration and provides reliable protection to the throat, neck, and collarbones.
The front and back parts are secured together by authentic rotary locking pins in flat slots - the same were used on medieval helmets and knee cops to attach them to the cuisses and greaves. Its stand-up collar is non-removable but firmly riveted on its bottom scalloped edge to both chest and back plates. It does not constrain movement and allows to hide the jaw and lower face in the absence of a helmet just sinking the head into the shoulders.
This gorget is supposed to be worn under a cuirass or over a brigantine and makes a great combo with the padded arming cap. Can complement your SCA and HMB kit, or act as a separate armor piece for LARP and mock battles. The matching “Black Knight” pauldrons aren't included but can be purchased separately, as well as the gorget and pauldrons armor set.

Is it possible to make this without the straight up neck protection for jousting purposes (i don't want to hurt the back of my neck on the flange)
